I do believe that good things come to those who wait patiently. The challenge is to learn patience and stick-to-it-ness. You appear to have mastered both when it comes to taking the best photos and distilling darn good syrup. Enjoy the fruits of your labor!!

In reply to Jacques (not Cousteau)). Our trees appear to be much sweeter than the stated average (2%). I sat there for a while working on a research project. Which works as long you don't mind inhaling a bunch of smoke when the winds blow your way.... I did find it very peaceful.

The mechanics of sap are very interesting. Have you noticed that some trees are sweeter than others – just like people I envied you sitting out there in front of your fire -what a wonderful way to enjoy the outdoors while doing something useful!
What a mensch the carpenter is! He doesn’t even like maple syrup.

I still have a tad of your delicious maple syrup from last years boil. I have only used it for special occasions like ice cream topping.
You gave it to me in the bottle you found in our little dump. I still have some nice bottles to go there so your welcome to stop by should you need some What you have boiled so far looks really good. Nice pic’s as usual.
